vCard (.vcf) is a text format with specially formatted contacts data, so a simple renaming to text may be enough, should you truly need it. However, you should be able to open it using any text editor regardless of the actual file extension, no vcf to text conversion is required.
You can also import your contacts directly to your email client / service and export it to whatever you need.
