File extension ibooks is related to Apple iBooks software and its latest e-book file format.
IBOOK format is based on EPUB e-books file format with additional formatting and optimization for iPad device.
These files are created from iba, which is the default authoring format of Apple iBooks Author application under macOS (OS X).
Use Apple iBooks for iPad to read an ibook file. If you want to create your own ebooks, try to use Apple iBooks Author or Vellum available in app store.
iBooks Author can export ibooks as PDFs. As for other ebook formats, it doesn't seem it is possible to convert IBOOKS to EPUB or similar format.
